How can I make my chili taste like chili?

I'm making some beef chili, I've put in ground beef, onions stewed and fire roasted tomatoes (some blended to make it thicker) and an ungodly amount of chili powder and cumin and I can't get it to have that 'chili' taste. Any suggestions?

my dad when making chilli he puts canel sticks into the chilli, it tastes actually very good..

I bought chili seasoning from my local natural foods store. It tastes great.

Another great suggestion is mole seasoning (I've only used the brown for chili; there's also green but I think that's generally to top enchiladas and whatnot). Use plenty of it. Buy it from your international foods store or directly from a Hispanic grocery store. If you don't have them nearby (and I'm sure you do), then look in your supermarket.

Also, be sure that you let your chili cook up until it thickens sufficiently. Watery chili, despite your best attempts at spices, will never taste like good chili.

One more thing - what about beans? What kind of chili doesn't have black beans and kidney beans?

ketchup. I know it sounds weird, but my mom's recipie is the best! It will have that perfect chili taste if you add ketchup. Mom adds about on bottle per big pot. Our big pots are probably around two gallons :)

Do Not add ketchup. Did you add fresh garlic? I also add seasoned salt and a touch of pepper.

You can add oregano as well if you want.

Do Not add ketchup. Did you add fresh garlic? I also add seasoned salt and a touch of pepper.

You can add oregano as well if you want.
Salt and pepper and garlic. It does have a lot of chili powder.

Garlic and some real chillies ( at least some chilli flakes ). Don't stew the onions.
